What is the easy way to smoke precooked beef brisket?

My wife is going to precook a beef brisket, until it's tender. She wants me to smoke it., this weekend. I have a charcoal barbecue. Do I just put the brisket on aluminum foil with holes punched in, and put it on the grill with charcoal and mesquite wood chips? Cooking on Low heat for how long? No need to precook it. Smoking IS cooking it!



Light your charcoals to one side of the grill. Leave the other half w/ nothing under them. Season up your brisket, remove a bit of the excess fat (leave some for tenderness), and set your brisket on the side w/ no coals. You can drop a few pieces of wet smoking wood (hickory, pecan, applewood, mesquite) onto the coals to make smoke and add flavor. You will also need to add coals along the way, and have a pan of water somewhere on teh grill (I hope you have a large-ish grilling surface) so the meat dosn't dry out. Smoke over a med-low heat for 6-7 hours. (I set my gas smoker to about 190潞-200潞F) Keep the lid on except when you are adding water, charcoal or wood chips, and make sure there is some ventilation so the smoke will be drawn thru the meat.



You will know you are successful when you have the tell-tale ';smoke ring'; just under the outer surface of the meat. It's pink. IT's a chemical reaction b/t the meat and the smoke, and the meat is fully cooked (dont' panic about it being pink) and means you did it right.

1. 1. Set grill up for indiret cooking over medium heat (no direct heat under brisket).

2. 2. Rinse brisket and pat dry. Season with salt and pepper and place in foil baking pan. Sprinkle with steak rub and pour over beer. Add enough apple cider to cover brisket halfway up. Top with sliced onions and cover with aluminum foil.

3. 3. Place pan on hot grill over a drip pan. Cover grill and cook 2 1/2 hours. If using charcoal , add 5 briquettes to each side every hour. Rmove brisket from braising liquid and place directly on the grill over the drip pan. Cmobine 2 cups of the braising liquid with the BBQ sauce. Mop brisket thoroughly with the sauce. Add 1/2 cup of the wood chips to each pile of coals. Cover grill. Turn and mop the brisket every 20 minutes for 1 hour.

4. 4. Transfer brisket to a cutting board and let rest for 10 minutes. Thinly silce against the grain and serve with mop sauce on the side.
