I want to buy a real bbq pit with a firebox..?

the only thing i've ever used is one of the cheap ones you have to put your wood and charcoal directly under the food.



you can't slow cook and smoke meats like brisket and ribs on these things.



can anyone offer advice on how to use a firebox for a first timer. is it true that by putting wood in the firebox it will generate enough heat to cook the meat without having anything directly under the meat?

Yep. This is the Weber version of a smoker. It's tall enough to have a fire on the bottom (use soaked wood for slow cooking/smoking), a pan of water (or use beer) and meat on top.

The first thing you need to look at is the stack coming out of the pit, make sure its not directly out of the top or you will lose most of your heat. You want a fire box that is easy to clean out, with a big door and dampers on the door itself so that you can regulate the heat going into the pit, more oxygen more heat. When looking at the pit area get one that the entire lid opens, not just a portion. If you don't open the pit very often you can get it way over 400 degrees.

When smoking a brisket soak some mesquite in a five gallon bucket with water for a day or so, this will bring more smoke out. Also put a pan of water in between the fire box and smoker so that you put humidity back into the pit.
for thousands of years and untold generations meat has been cooked by the INDIRECT METHOD. by placing the meat out of the direct fire it tends to cook and not look like a charcoal when it is done. You can built your own barbecue pit using bricks and mortar. Just remember this, you will need to have the fire chamber off to the side of the pit itself. and have ample space to cook the appropriate amount of meat for your needs. If it is just for your immediate family I would suggest you go with a good old smoker/grill from the friendly folks at new braufels Texas, The Hondo is a very reasonably priced well made unit despite its Achilles heel cheap Chinese pot metal legs,it is a solid cast iron design that will last for years(if you put it on landscape timbers like I did) any way. I think you will appreciate what this hondo does for any and all meat events in your backyard. I wish you could see mine in action.
