How do you use a charcoal grill, say weber to cook chicken quarters slowly and not burn them?

I just got a new Charcoal Grill, we are use to grilling with gas. The steaks we did tonight were great but we were shocked because they cooked so fast over the hot coals. Is there a secret how to get the temperature down but keep heat long enough to grill chicken quarters or roastbeef? Please help me learn some basic grilling sense fast.How do you use a charcoal grill, say weber to cook chicken quarters slowly and not burn them?
As the previous people have answered: INDIRECT.



Take the chicken quarters and cut slits in the skin every inch. This lets steam out when cooking. Sprinkle with salt and pepper and rub with some oil.



Put coals on one side of the kettle, Put a drip pan on the other side so it can catch the chicken drippings.



Put chicken on grill, skin side up, cover and wait 20-25 minutes. Then rotate all pieces and take the pieces nearer the coals and move them farther away. Keep the chicken skin side up.



Wait 20 more minutes.



By now the skin should be golden and crispy. You can put the pieces directly over the coals skin side down for 1-2 minutes to get grill marks if you want.How do you use a charcoal grill, say weber to cook chicken quarters slowly and not burn them?
first, you should not grill meaty directly over the heat, unless it is something like steaks that you are going to be there constantly for and plan on flaming them. Instead, put the coals on one side of the grill bottom and when your charcoal is ready to cook, shove them to one side of the grill bottom, and place the foods to be cooked over the other side of the grill on the rack. Things like baked potatoes in foil, corn in husks can be placed over the coals, but most things should be off to the side cooked indirectly.
SWEET BABY RAY'S BBQ CHICKEN



22 1/2 inch Weber grill

Grease pan

10 lb. bag of charcoal

8 oz. apple, cherry or hickory chips soaked in water

Pair of tongs

2 chickens, cut up and skinned

16 oz. Sweet Baby Ray's BBQ Sauce

Salt

Fresh ground pepper

Onion salt

Basting brush



Cooking time: 60 minutes.

Put 50 coals in center of grill and burn for 30 minutes. Then put 25 coals on each side and put grease pan in middle of grill basin. Rinse chicken pieces in cold water and pat dry with paper towel. Season both sides of chicken generously with salt, pepper and onion salt.



Place chicken in center of grill and cook for 30 minutes. After 30 minutes, turn chicken. Add soaked wood chips to each side of coals. After 20 minutes, turn and brush on generous amounts of Sweet Baby Ray's. After 10 minutes, turn and brush other side with BBQ sauce. Then serve and enjoy!
